TRATA smoked herring contains tender fillets in vegetable oil, which have been cold smoked in a wood-fired oven in the Konva facilities.  There is extra attention to the duration of smoking for a balance of flavor.  Special wood chips are used to obtain a safe, smoked product, highlighting a ripe smell and taste.
