Among the great traditional cheeses of Spain and apparently the favourite of Don Quixote. Manchego is cured in the ancient cattle-raising region of La Mancha from Manchego sheep milk. The Denomination de Origen seal guarantees the quality of this tangy, full-flavoured, slightly grainy cheese. The intense flavour and crumbly texture make it an ideal table cheese to serve with olives, sun-dried tomatoes, crusty bread and a robust red wine or dry sherry.
